What Are Cacao Nibs?
When people think about chocolate, they rarely think about where it truly begins.
At GLAD, everything starts with cacao. We receive raw cacao beans and develop a specific roast profile for each origin. Roasting is where transformation begins — where aroma develops, flavors deepen, and each cacao reveals its true character.
After roasting, we move to the next essential step: cracking the beans and separating what’s inside from the shell. What we keep is the heart of cacao. These are cacao nibs.
The Purest Form of Chocolate
Cacao nibs are simply roasted cacao in its most honest form. No sugar. No additives. No processing beyond roasting and cracking. They are the most important part of cacao — because this is where everything lives:
Flavor
Fat (cacao butter)
Fiber
Protein
In other words, nibs are chocolate before it becomes chocolate.
Two Paths: From Nibs to Chocolate (or Not)
Once we have cacao nibs, there are two possible paths.
1. Turning nibs into chocolate
This is where we grind and refine the nibs, transforming them into chocolate. This is the foundation of everything we make — from our bars to our spreads.
2. Keeping nibs as they are
Cacao nibs are also perfect to enjoy in their pure form — crunchy, intense, and deeply flavorful.
How to Use Cacao Nibs
Cacao nibs are incredibly versatile. They bring texture, depth, and a real chocolate flavor to everyday food. Here are some of our favorite ways to use them:
Mix into yogurt or granola
Add to smoothies for a chocolate boost
Use in baking (brownies, cookies, cakes)
