What is dark milk chocolate?

If you have ever found yourself torn between the bold flavour of dark chocolate and the silky smoothness of milk chocolate, here is good news: you do not have to choose. Dark milk chocolate was born precisely from that dilemma, bringing the best of both worlds together in a single bar. But to truly appreciate what makes it so special, it helps to understand the two categories that gave rise to it.

Dark chocolate

High cacao content (generally above 60%), with little or no milk. Intense, slightly bitter flavour with complex aromatic notes from the cacao.

Milk chocolate

Lower cacao content with generous amounts of milk and sugar. Sweet, mild, and creamy — the most popular style in the world.

Dark milk

The best of both: high cacao content with added milk. As creamy as milk chocolate, yet with the depth and character of dark.

Dark milk is, at its core, a milk chocolate made with a much higher proportion of cacao — typically between 45% and 65%. This means it preserves the fruity, earthy, and aromatic notes of the cacao bean while still delivering the velvety texture that milk provides.

  • Less sugar in the recipe — with more cacao in the formula, there is less room for sugar. The result is a less sweet, more balanced chocolate that never overwhelms the palate.

Meet our Dark Milk

After much research and experimentation, we arrived at a recipe that captures everything we believe great chocolate should be: a Dark Milk 60% with Indonesian Cacao & Coconut Milk

Indonesian cacao is known for its earthy, lightly fruity notes with a hint of spice — a profile that takes on an entirely new dimension when paired with coconut milk. By replacing dairy milk with coconut milk, we achieve an even more delicate creaminess, with a gentle tropical undertone that complements this cacao's character beautifully.

The result is a chocolate that speaks to dark chocolate lovers and those seeking something more approachable alike. At 60% cacao, it has personality — but it is gentle enough to win over any palate.
