But there's another way to honor great cacao: pairing it.

A Second Path: Inclusions

When a cacao has a distinctive flavor profile — fruity, earthy, bright, or complex — certain ingredients can bring out sides of it that pure chocolate only hints at. The right inclusion doesn't cover the cacao. It opens it up.

That's the thinking behind our Inclusions line: single origin tablets where each recipe is built around one specific origin, and one set of complementary ingredients chosen to deepen the experience.

Why Inclusions Matter

Flavor contrast. A touch of sea salt against dark chocolate from Nicaragua sharpens the floral notes that Nicaraguan cacao naturally carries. Contrast isn't competition — it's clarity.

Creative expression. Every maker's inclusions choices reveal their relationship with the cacao they work with. It's one of the most personal expressions in craft chocolate.

Visual appeal. There's something immediately inviting about seeing fruits, slivered almonds, or oats pressed into a bar. You know what you're getting, and it feels handcrafted — because it is.

An accessible entry point. For someone just beginning to explore bean-to-bar chocolate, inclusions can bridge the familiar and the new. The flavor of great chocolate, with anchors they already recognize and love.

The Inclusions Line

Each bar in our inclusions collection starts from a single origin and builds outward from there.

Sea Salt. Nicaraguan cacao brings natural floral brightness and mild acidity. A measured amount of sea salt amplifies those notes and adds a satisfying finish that lingers.

Raspberry. Madagascar is famous for producing some of the world's most intensely fruit-forward cacao — red fruit, citrus, and berry character in abundance. Dried raspberry is the natural companion: it echoes what's already there and turns it up.

Almond. Ecuadorian cacao is prized for its deep nutty base notes. Almonds bring crunch and a gentle richness that plays beautifully against the cacao's smooth, rounded finish.

Coffee, Oats & Nibs. Our most complex bar. The same Ecuadorian cacao here meets roasted coffee, oats and cacao nibs — a layered combination of bitterness, texture, and depth. For those who want their chocolate to feel like a full experience.

Still Single Origin

Despite the added ingredients, every bar in this line is built on a single origin. There's no blending origins to chase a target flavor. The cacao is the foundation, and the inclusions serve it — not the other way around.
